Elio Altare
Elio Altare is an innovator who openly adapted new ideas and applied them with a firm belief. As a result, his effort extended the spectrum of Barolo wines, which is a great benefit for wine drinkers.
He is known for maturing the wines in Barrique. This sensational change was made after visiting Bourgogne with his fellow winemakers of Piemonte in 1976. Since 2003, Elio’s eldest daughter, Silvia, is working beside him. The vineyards are cultivated organically without use of chemicals or pesticides. The vines are fertilized with organic cow manure. During the alcoholic fermentation, only indigenous yeasts are used to initiate natural malolactic fermentation.
